Always use fresh fruit when possible. Garnishes of fruit that require muddling and shaking deteriorate quickly, so only cut what you need as you serve drinks.


Using Ice
Using crushed ice in drinks makes for an even colder drink due to the larger surface area of the ice versus the mixer. Quality ice crushers are available in hospitality stores.

Prep Tips
Set aside an area exclusively for preparation of drinks. This ensures a clean and hygienic space for mixing drinks.

Glassware
Invest in correct sized glassware that is not too small or large as this may affect the dilution and quality of the drink. Fill ice to the top of glassware for appropriate mixed drinks as this ensures correct dilution of spirit and also correct chilling.
